ROASTER'S NOTES:

This certified organic offering comes to us from our producing partners of APROCASSI. We have been purchasing coffee from this cooperative of growers for several years, using it as the basis for our decaffeinated FTO (Fair Trade Organic) Peru.

The cooperative was formed in 2000, and has approximately 490 members spread throughout the region of San Ignacio in the state of Cajamarca. Of these 490 members, over 45% are under the age of 35, and 16% are women producers.

This particular micro-lot is generated by only two of those co-op members. Producers Segundo Vega and Santos Paulino have farms in a very unique micro-climate in the small area of Huabal, where this coffee is grown. This is a fully washed blend of Caturra, Typica, and Bourbon varieties grown in this area.

PRODUCTION NOTES:

Segundo and Santos were recognized by the cooperative as producing some of the highest quality beans, so they took the opportunity to separate their coffees into a micro-lot.

This program of creating smaller lots within the cooperative is a way to recognize the hard work and dedication of individual producers, and also return higher prices to the coop and its members.

CUP CHARACTERISTICS:

In the cup the coffee is extremely sweet and balanced. There are flavors of raisin, fig, and nougat. The coffee is medium to heavy bodied with a clean and silky finish. Much care and effort was put into producing this fine cup of coffee; we hope you appreciate it as much as we do.
