ROASTER'S NOTES:

This offering is traceable to a single estate in the Keffa zone, west of Jimma. The area is further north and west from the Sidamo and Yirgacheffe zones than our usual offerings. A man named Girma Eshetu is the owner and manager of this farm, and the story of his journey from student to coffee farmer is an interesting one.

While pursuing an engineering degree, he started working in the St. George beer brewery in Guji. With his interest in processing equipment sparked, he soon started his own business manufacturing processing equipment—but for coffee, not beer. One thing led to the next and voila, he’s in the coffee business. At that point a desire to return to his ancestral lands took him to the Keffa zone, and a farm was born.

The farm has now been in operation over 20 years, and the resulting coffee is exceptional.

PRODUCTION NOTES:

This coffee is fully washed. It was de-pulped, then underwent traditional fermentation for roughly 48 hours, after which is was washed and then dried on raised beds for 12 days or so. As you may suspect, having a degree in engineering made Girma somewhat exacting in nature. This coffee reflects his commitment to quality and focus.

CUP CHARACTERISTICS:

Aromatically, the coffee is loaded with citrus zest and lavender. Both of these aromatic attributes carry over to the cup with additional sweetness and a velvety mouth feel. The finish is long lasting and fresh.
