ROASTER'S NOTES:

Yirgacheffe (Yur-Ga-Cheff) is a high altitude sub-region within the larger area of Sidamo. This fine coffee is produced at the Aricha washing station on the flanks of a local mountain called “Naga Singage”.

The mountain is the spiritual center for many of the surrounding communities. Elders from these communities often seek counsel from the mountain through the performance of “Songo,” a reconciliation ceremony. It is through the blessing of these elders that these communities maintain their spiritual health.

The variety is an heirloom typica, more specifically in this case “Kurume.” This is a variety known to produce amazing quality in the area specific to Naga Singage.

PRODUCTION NOTES:

Known for producing some of the finest coffees in the world, Yirgacheffe farmers deliver cherry to the washing station, where only the highest quality is chosen for this “grade one” lot. After sorting, the coffee is sun dried on elevated drying beds.

Upon traveling south from Addis, you soon enter the great Rift Valley. The area is believed to be the origin of humankind, a place that is steeped in natural history and mystique. Eventually you climb from the valley floor to a lush green oasis. The towns of Awasa and Dila greet you, and once again you are reminded you are indeed in coffee country.

CUP CHARACTERISTICS:

This coffee is incredibly floral, with a bouquet of lavender and citrus blossom. Sweet, balanced, and delicate, flavors of hibiscus and jasmine will saturate your palate, transcending the usual coffee drinking experience. Despite its exotic description, this is a very easy drinking and approachable coffee. It also makes an amazing cold brew. Try it over ice!
