Bolivia Waliki Natural Process

To say this is a complex cup of coffee would be an understatement.

The “Waliki” is naturally processed, meaning the fruit is left on while the seed or coffee is dried. This creates a cup profile of fruit-like sweetness. In this case the cup possesses flavors of summer berries, as well as a distinct floral quality. You will also find flavors of nutmeg and cream to round out the sensorial experience.

ROASTER'S NOTES:

This special small lot comes to us from our friends the Rodriguez family. You are most likely familiar with their coffee as our organic “Buena Vista”.

However, in addition to organizing and processing coffee for other small organic producers in the area, they also have a couple of their own small farms and produce some very unique micro-lots.

It was over 15 years ago that we met Pedro Rodriguez at a coffee event in Central America. The beauty of occasions like this, and the coffee industry in general, is you never know when the seeds you plant will eventually come to fruition.

ROAST PROFILE:

PRODUCTION NOTES:

Pedro, the father of the family, acquired seed stock of the “Java-Nica” variety from our good friends at Fincas Mierisch in Nicaragua. He planted these seeds eight years ago, and now the variety is flourishing on his farms.

The producing area is very high in elevation, pushing 2000 meters in some places. The mill is called “Buena Vista,” and is very selective with the cherries that it processes.

The coffee is harvested and then immediately laid out to dry, no water is used during the fermentation process, in an effort to conserve as much water as possible.

RECOMMENDED BREW METHODS:

In the cup, the coffee is clean and extremely sweet with flavors of summer berries, nutmeg, and cream. We prefer Filtered brew methods for this clean tasting natural coffee.

Filtration gives clarity of flavor in the cup and drip methods like Chemex, Pourover, or even Clever Dripper, are all great options for getting the most out of this exceptional sample.

ROASTED TO ORDER:

When you order online, your coffee is roasted the next morning (Monday-Thursday) by our artisan roasters in Olympia, WA and is packaged and shipped out to you that afternoon.

In just a few days your coffee arrives on your doorstep, ready to be brewed into the best cup of coffee possible.

OUR PROMISE:

When we find an exceptional coffee we buy it. Then the unroasted beans travel by land and by sea to the USA where our artisan roasters develop a custom roast profile for the coffee that best highlights its unique qualities.

We pay farmers fairly and build relationships that last decades. More than 30 years of experience means we have an abundance of relationships with coffee producers that grant us access to the best coffee beans in the world.
