Certified organic coffee has been farmed without the use of pesticides or other synthetic inputs, which may include chemical fertilizers, herbicides and fungicides. Genetically modified seeds or plant stock are prohibited from organic farms. Pests and weeds must be controlled through preventative maintenance, manual weeding or by naturally derived substances. Certification agencies encourage responsible composting and processing to promote healthy soil and preserve water supplies.
